Ingredients
  

  • 1 medium zucchini
  • ¼ cup unsalted butter melted
  • ½ cup breadcrumbs see note
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder

Method
 

  1. Slice zucchini into disks.
  2. Melt butter in a small bowl.
  3. In another small bowl, mix breading and Parmesan (and seasoning, if desired).
  4. The zucchini will sweat while it sits on a plate, so make sure to blot it with a paper towel before breading.
  5. Dip each zucchini slice in butter, then breading.
  6. Arrange in a single layer in air fryer basket or rack.
  7. Air fry at 390 degrees F, for 15 to 17 minutes, or until golden brown.

Notes

  • Tip 1: I used Italian style breadcrumbs; if you are using plain, add Italian seasoning; use panko for even crunchier breading.
  • Tip 2: I didn’t salt the zucchini since Parmesan cheese is pretty salty. You can always season baked crisps with salt and pepper if desired.
