Method
- Slice zucchini into disks.
- Melt butter in a small bowl.
- In another small bowl, mix breading and Parmesan (and seasoning, if desired).
- The zucchini will sweat while it sits on a plate, so make sure to blot it with a paper towel before breading.
- Dip each zucchini slice in butter, then breading.
- Arrange in a single layer in air fryer basket or rack.
- Air fry at 390 degrees F, for 15 to 17 minutes, or until golden brown.
Notes
- Tip 1: I used Italian style breadcrumbs; if you are using plain, add Italian seasoning; use panko for even crunchier breading.
- Tip 2: I didn’t salt the zucchini since Parmesan cheese is pretty salty. You can always season baked crisps with salt and pepper if desired.
